Moe's Copycat Chicken Club Quesadillas

So in case you don't know, I love to eat at Moe's. This isn't surprising, because pretty much any food that consists of melted cheese is a winner in my book! Whenver I go to Moe's, I order the Chicken Club Quesadilla. With a drink, this meal costs me $9.50. I could go to a sit down restaurant for that cost, so I decided to find a way to satisfy my quesadilla cravings at home. Luckily, I own a quesadilla maker! (We didn't buy it, but we won it in a White Elephant game last Christmas!)




Ingredients:
  • Soft tortillas
  • Shredded chicken breast
  • Mexican blend cheese
  • Bacon crumbles
  • Ranch dressing
  • Salsa
  • Any other accoutrements that you heart desires


Directions:
  1. Heat up your quesadilla maker. (Seriously, they're pretty cheap. Here is one from Kohl's & here is one from Target - great investment.)
  2. Shred the chicken - if the chicken is cold, like mine was, you can also cut it into chunks with kitchen scissors.  
  3. Layer all of your toppings.
  4. Fold over & cook.
  5. Use a pizza cutter to slice into triangles & serve with salsa for dipping on the side.





So there you have it - a totally simple & kid friendly weeknight meal at a much cheaper price than takeout!
