Unexpected Day Off

Late last night. I received a phone call from our babysitter letting me know that she has pneumonia! Since all of our family is at least an hour away, I had to call in to stay at home with Ella. I've decided that its just like a snow day, only better because we got to go do things! 

Our Agenda:

1 - Breakfast... because it's the most important meal of the day! 

I really wanted scrambled eggs & ham, but Eric ate the last of the eggs. I settled for toast & ham, but I'm still craving eggs. 

2 - Trip to Wegmans 

The blogosphere is filled with tales of Costco, Whole Foods, and Trader Joe's, but I'm here to tell you that Wegmans is where it's at! I absolutely love this store and I took pictures all over to show you why.

3 - Make Buffalo Chicken Bites

The whole point of our trip to Wegmans was to get supplies for Buffalo Chicken Bites. They're my favorite & guess what - they are baked! I like to eat them in salads, but they're delicious on their own too, which is how I ate them at lunch. I found this recipe on Pinterest [follow me}, but here's the link to its original source. The only change that I make to the recipe is that I use ranch dressing instead of mayonnaise to coat the chicken. (I loathe mayo.)

4 - Head to School... because Mommy still had a Meeting to Attend

Even though I took a "sick" day, I had a parent meeting to attend & I didn't want to waste time trying to reschedule. Luckily, I have friends at school who were willing to play with her for 30 minutes. 

5 - Cheer Practice! 

We HAD to finish the routine tonight. It simply HAD to get done. I'm sure the girls thought that I was being cranky and Hitler-esque, but sometimes you just have to get shit done. 

We've had a lot of injuries this season & I was hoping that we'd be healthy when we came back. But... I have another girl out with a concussion. Concussions are the worst & we take them really seriously these days. I've never had one personally, but I can tell you that I've seen some bad ones through coaching ~ they aren't something to brush off. This means that we've changed things around for the millionth time & we'll probably have to move things around at least 100 times more before we compete next Saturday. 

6 - Hit the Gym

I went to the gym after practice & ran 4 miles. I'm trying to get my body adjusted to doing 3 to 4 miles on a daily basis. Those used to be my long runs, so it's definitely an adjustment. 

When I got home, I treated myself to a theme dinner. The theme you ask... PEANUT BUTTER! 1/2 a PB sandwich (I hate J), sliced banana, & pretzel crisps. So delicious!
